Colour Brilliant pale lime yellow. Nose Intense fruit aromas of sweet citrus, tropical fresh fruit and mineral notes. Palate Light and fresh palate, with pleasant roundness and a grassy finish. Service and Food Pairing Perfect for fresh vegetable salads, sea food and appetizers. Serve well chilled from 6 to 8deg C 42degF to 46degF. Harvest The fall winter 2009, with the exception of June, was much drier and cooler than usual with about 30% less rainfall in our vineyards. September was also cold, so bud break happened a bit later than last season. The spring showed normal amounts of rainfall but with very low temperatures. These cold conditions disturbed the pollination and naturally lowered the yields. Fortunately, during second half of December the normal sunny conditions returned. At that point the plants had from 8 to 10 days of delay in their development. Summer brought us cool nights preserving grapes freshness and inducing the concentration of aroma. Summer also brought the 5th biggest world earthquake ever recorded, so the few days delay of the crop were a blessing in order to organize the winery and get ready to crush the grapes. Harvest started as planned on March 11th by hand, at night, in order to preserve the must from oxidation and save some cooling power in the winery. Vinification 100% of our Sauvignon Blanc from Las Kuras vineyard was hand harvested at night. We began night harvest with the 2009 vintage because it allowed us to enhance the fruit and the freshness of the wine in addition to saving some cooling energy at the cellar. At this point of the process, we do all we can to preserve the fruit and acidity. Natural decantation in tanks followed, with slow and low temperature fermentation in stainless steel tanks and 1 month of ageing in lees. We added 7% of Semillon coming from old vines of Apalta the result is more complexity in the nose and a rounder mid palate, to produce a very charming wine with crisp acidity and intense flavours.
