There are approximately 250 hectares of Chardonnay planted in Navarra but only the innovative Principe de Viana cellars thought to make a fine dessert wine from this international grape. Initially macerated at 8 degrees in order to extract the maximum aromas from the grape skins before moving to 100% new French oak barrels for normal fermentation. The oak gives this wine a depth and vanilla edge which adds to the overall complexity of this curious but serious dessert wine.
