The blend consists of 60% Semillon and 40% Chardonnay. Both varieties were harvested in early February at ideal maturity for this style of wine. The grapes were de stemmed and crushed, the must chilled and gently pressed. The cloudy juice was cold settled, racked and the clear juice fermented at a cool temperature. The wines were blended and kept cold until bottling so as to retain their freshness. This blend has resulted in a fresh fragrant lighter style showing attractive aromas of straw and tropical fruits. The palate is light and soft making the wine very easy drinking. Serve chilled. A wine to drink young and fresh with Asian food especially Thai Malaysian dishes. Also try with chicken salad or chicken casseroles.
